Hey guys It’s a Friday so I decided why not bake a pie 😛 ..
It’s made from scratch so this is how I did it and don’t go being super critical about the pie because I aint no chef 🙂 .
2 1/2 cups all purpose baking flour
2 teaspoons salt & pepper depending on how salty you like it you could add a pinch more.
1/2 cup butter again you could add a little more.
2 chicken stock cubes.
cup of peas
1/2 kilo of boneless chicken.
Now to be safe I would keep atleast 1 litre milk on the side
Some extra flour.
Basically you get the flour , butter salt & pepper and mix it in a bowl with your fingers – Yes fingers, you have to make it have a breadcrumb consistency like this
Now add a few teaspoons of cold water and get kneading.
Once its kneaded it should be a soft non sticky ball of dough. Cling film this and leave in the fridge for 30 minutes.
Now onto the veg. Put the diced carrots, peas and whole potatoes into a pot to boil- make sure you take it out about 4-5 minutes before you normally do as it will also cook in the oven.
In a saucepan add some butter and sauté onions with a few herbs of your liking, then add the chicken and let it fry – again it does not matter if chicken is not fully cooked.
Now add 2 stock cubes in about 2.5 glasses of boiling water and put to the side.
Sauce- another pot (non stick) add the butter about 3 tablespoons and let it melt. Then add the flour, it doesn’t have to be too much maybe try adding 2 tablespoons .. if you feel its not that much add another tablespoon then it looks like a paste- now add some milk and mix it well then add the chicken stock – keep mixing hunnies till it looks like this
Fun bit now is you roll your dough, place it in the tin – roll some more dough for the top of the pie . Mix the chicken and veg into the sauce and into the tin – Roll the pastry dough on top and voila – 30 mins in the oven and enjoy .
